Costa Vida Fresh Mexican Grill opens in Gainesville

Costa Vida Fresh Mexican Grill, a Utah-based fast casual Mexican cuisine concept opened at 3581 SW Archer Road in the Archer Centro West Shopping Center in early September. This location marks the first opening of Costa Vida Fresh Mexican Grill in the state of Florida.

Costa Vida held a day-long grand opening celebration on September 24 with the first 100 guests in line rewarded with free burritos for a year. The first 50 will be able to get a free burrito once a week for a whole year. The next 50 will be able to redeem a free burrito once a month for a whole year.

“Gainesville has proven to be a great fit for Costa Vida—it’s dynamic, action oriented vibe reflects our restaurant’s inviting atmosphere,” stated Sam Haddock, who co-owns the new Costa Vida with his partners in H2R Restaurant Group LLC, Will Robinson, Bob Harris and Brad Slaughter. “After experiencing the great food and culture of Costa Vida at its Utah headquarters, it was an easy decision to bring Costa Vida to Gainesville.” H2R LLC signed a 10 restaurant development agreement that ranges from Gainesville, Fla. to Sarasota, Fla.

The fresh Mexican grill serves food made from scratch daily, giving them the ability to cater to those with dietary restrictions or who are simply looking to improve their diet.
